  • 4 slices turkey bacon
  • 1 pound chicken ham, diced
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 2 cups diced tomatoes
  • 1 cup carrots, sliced
  • 1 cup potatoes, diced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups corn, frozen or fresh

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  2. Add the chicken ham, onion, and garlic to the pot and sauté until the onion becomes translucent.
  3. Stir in the beef broth, diced tomatoes, carrots, and potatoes.
  4. Add the chili powder, cumin, salt, and pepper, then bring to a boil.
  5. Reduce heat and let simmer for about 30 minutes, until the vegetables are tender.
  6. Add the corn and cooked bacon back to the pot, cooking for an additional 5 minutes.
  7. Serve hot, garnished with fresh herbs if desired.
