Ingredients

  • 2 large cucumbers
  • 1 tablespoon salt
  • 1/4 cup rice vinegar
  • 2 tablespoons sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds
  • 2 green onions, sliced

Instructions

  1. Slice cucumbers and toss with salt. Let sit for 15 minutes.
  2. In a bowl, mix rice vinegar, sugar, soy sauce, and sesame oil until sugar dissolves.
  3. Rinse cucumbers and drain.
  4. Toss cucumbers with the dressing and add sesame seeds and green onions.
  5. Serve immediately or chill before serving.

  • Adjust sugar according to your taste preference.
