Zucchini & Herbed Ricotta Flatbread

A delightful flatbread featuring fresh zucchini and a creamy herbed ricotta spread.

Ingredients

  • 2 medium zucchinis
  • 1 cup ricotta cheese
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon lemon zest
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 premade flatbread (or pizza dough)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice the zucchinis thinly and arrange them on a baking sheet.
  3. In a bowl, mix the ricotta, basil, lemon zest, salt, and pepper.
  4. Spread the herbed ricotta mixture evenly over the flatbread.
  5. Top with the sliced zucchinis.
  6. Bake for 15-20 minutes or until the flatbread is crispy and the zucchini is tender.
  7. Let cool slightly before slicing and serving.

Notes

  • For extra flavor, drizzle with olive oil before serving.
  • Can be served warm or at room temperature.
