  • 1/2 cup sugar
  • 1/4 cup oil
  • 2 eggs
  • 1/2 cup cooked turkey bacon, chopped
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix the grated zucchini, oil, sugar, and eggs until combined.
  3. Add the flour, baking soda, salt, and cinnamon to the wet ingredients and mix until just combined.
  4. Fold in the chopped turkey bacon and vanilla extract.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 50-60 minutes, or until a toothpick comes out clean.
  7. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
