- 2 cups grated zucchini
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup oil
- 2 eggs
- 1/2 cup cooked turkey bacon, chopped
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- Preheat the oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mix the grated zucchini, oil, sugar, and eggs until combined.
- Add the flour, baking soda, salt, and cinnamon to the wet ingredients and mix until just combined.
- Fold in the chopped turkey bacon and vanilla extract.
