Witch’s Cauldron Beef Stew

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 3 carrots, chopped
  • 2 potatoes, diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the beef cubes over medium heat.
  2. Add the onions and garlic, and sauté until translucent.
  3. Stir in the tomato paste, Worcestershire sauce, thyme, and rosemary.
  4. Add the beef broth, carrots, and potatoes.
  5. Bring to a boil, then reduce heat and let simmer for 2 hours.
  6. Season with salt and pepper before serving.

Notes

  • For extra richness, add a splash of red wine to the stew.
  • This stew can be made a day ahead for better flavor.
