  • 1 pound chicken breast, shredded
  • 4 strips turkey bacon, cooked and crumbled
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup corn, frozen or canned
  • 1/2 cup sour cream
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. In the same pot, add onions and garlic, cooking until translucent.
  3. Add the shredded chicken, white beans, chicken broth, cumin, chili powder, oregano, salt, and black pepper.
  4. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  5. Stir in corn, sour cream, and cilantro just before serving.
  6. Top with crumbled bacon for extra flavor.

Notes

  • For added spice, include diced jalapeños in the recipe.
