  • 1 pound boneless, skinless chicken breasts
  • 4 slices turkey bacon
  • 1 can white beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jalapeño, diced (optional)
  • 1/4 cup cilantro, chopped (for garnish)

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add chopped onions and garlic to the bacon drippings, sautéing until translucent.
  3. Add the chicken breasts to the pot, along with the chicken broth, cumin, chili powder, salt, and pepper. Bring to a boil.
  4. Reduce the heat and simmer for 20 minutes, or until chicken is cooked through.
  5. Remove chicken, shred it, and return it to the pot along with the white beans and corn.
  6. Simmer for an additional 10 minutes; add jalapeño if desired.
  7. Serve hot, garnished with cilantro and crumbled turkey bacon.
