A hearty and comforting vegetable soup that features turkey bacon for added flavor.

  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 zucchini diced
  • 1 bell pepper diced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt to taste
  • Pepper to taste
  • 1 cup green beans trimmed and cut

Instructions

  1. In a large pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  2. Add olive oil, onion, carrots, and celery to the pot. Sauté until softened.
  3. Stir in garlic, zucchini, and bell pepper. Cook for a few minutes.
  4. Add vegetable broth and diced tomatoes. Bring to a boil.
  5. Stir in oregano, basil, salt, and pepper. Reduce heat and simmer.
  6. In the last 10 minutes, add the green beans and the crumbled turkey bacon back into the pot.
  7. Adjust seasoning before serving.

Notes

  • For extra flavor, add a splash of lemon juice before serving.
  • You can add other vegetables based on your preference.
