Vegan Creamy Sundried Tomato Pasta

A rich and creamy vegan pasta dish made with sundried tomatoes.

Ingredients

  • 1 cup sundried tomatoes, packed in oil
  • 1 cup cashews, soaked
  • 2 cups vegetable broth
  • 2 cloves garlic
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon nutritional yeast
  • 1/4 cup fresh basil

Instructions

  1. Cook pasta according to package instructions.
  2. Blend soaked cashews, sundried tomatoes, vegetable broth, garlic, salt, pepper, and nutritional yeast until smooth.
  3. Heat the sauce in a pan over medium heat.
  4. Toss the cooked pasta with the sauce and fresh basil.
  5. Serve warm and enjoy!

Notes

  • For a spicier version, add red pepper flakes to the sauce.
  • Leftovers can be reheated on the stove with a splash of water.
