Vegan Creamy Sun Dried Tomato Pasta

  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 cup sun dried tomatoes, chopped
  • 1 cup coconut milk
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup nutritional yeast

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add sun dried tomatoes and cook for a few minutes.
  4. Stir in coconut milk, basil, salt, and pepper. Bring to a simmer.
  5. Mix in nutritional yeast and adjust seasoning to taste.
  6. Toss the cooked pasta in the sauce until well coated.
  7. Serve hot with additional basil, if desired.
