Vegan Creamy Sun Dried Tomato Pasta Recipe

  • 8 ounces pasta of choice
  • 1 cup sun dried tomatoes, packed in oil
  • 1 cup coconut milk
  • 2 tablespoons nutritional yeast
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/4 cup fresh basil, chopped

Instructions

  1. Cook the pasta according to package instructions until al dente.
  2. In a blender, combine the sun dried tomatoes, coconut milk, nutritional yeast, garlic, dried basil, salt, and pepper. Blend until smooth.
  3. In a skillet, heat the olive oil over medium heat. Add the blended sauce and simmer for 5 minutes.
  4. Add the cooked pasta to the skillet and toss to coat in the sauce.
  5. Remove from heat, stir in fresh basil, and serve immediately.

Notes

  • For a spicier version, add red pepper flakes to the sauce.
