Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 2 stalks celery, diced
  • 4 cups vegetable broth
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 teaspoon dried Italian herbs
  • 1 cup kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, carrot, and celery; sauté until softened.
  2. Pour in vegetable broth, then add the cannellini beans, diced tomatoes, and Italian herbs. Bring to a boil.
  3. Lower the heat and let it simmer for 15 minutes.
  4. Stir in the kale and heavy cream, and cook for another 5 minutes.
  5. Season with salt and pepper to taste, then serve hot.

Notes

  • For added flavor, consider topping with freshly grated Parmesan cheese.
