- 4 chicken thighs
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- 1 cup chicken broth
- 1 can chickpeas, drained and rinsed
- 1 cup diced tomatoes
- 1/2 cup dried apricots, chopped
- 1/4 cup almonds, chopped
- 1/4 cup fresh cilantro, chopped
- Heat olive oil in a tagine or heavy skillet over medium heat.
- Add onions and garlic, and sauté until golden.
- Season chicken thighs with spices and brown them in the skillet.
- Add chicken broth, tomatoes, chickpeas, and apricots. Bring to a simmer.
- Cover and cook on low heat for about 45 minutes.
- Sprinkle with almonds and cilantro before serving.
