Traditional Moroccan Chicken Tagine

  • 4 chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • 1 cup chicken broth
  • 1 can chickpeas, drained and rinsed
  • 1 cup diced tomatoes
  • 1/2 cup dried apricots, chopped
  • 1/4 cup almonds, chopped
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. Heat olive oil in a tagine or heavy skillet over medium heat.
  2. Add onions and garlic, and sauté until golden.
  3. Season chicken thighs with spices and brown them in the skillet.
  4. Add chicken broth, tomatoes, chickpeas, and apricots. Bring to a simmer.
  5. Cover and cook on low heat for about 45 minutes.
  6. Sprinkle with almonds and cilantro before serving.
