  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, combine flour and powdered sugar, then cut in the butter until crumbly.
  3. Press the mixture into the bottom of the prepared baking dish and bake for 15 minutes.
  4. In another bowl, whisk together the eggs, granulated sugar, lemon juice, lemon zest, and salt.
  5. Pour the lemon mixture over the baked crust and return to the oven for an additional 20 minutes.
  6. Let cool before slicing into bars and dust with powdered sugar if desired.
