  • 1 onion sliced
  • 3 cloves garlic minced
  • 1 tablespoon red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 8 ounces rice noodles
  • 1 cup carrots sliced
  • 1 cup bell pepper sliced
  • 2 cups spinach
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon fresh cilantro chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add onion and garlic; sauté until softened.
  3. Stir in the red curry paste and cook for 1 minute.
  4. Add vegetable broth and coconut milk; bring to a simmer.
  5. Stir in the rice noodles, carrots, and bell pepper; cook for 5-7 minutes.
  6. Add spinach, soy sauce, and lime juice; cook until spinach wilts.
  7. Serve hot, garnished with fresh cilantro.
