Thai Coconut Curry Dumpling Soup

  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon ginger minced
  • 2 tablespoons red curry paste
  • 4 cups vegetable broth
  • 1 can coconut milk
  • 1 cup dumplings (frozen or homemade)
  • 1 cup mushrooms sliced
  • 1 bell pepper sliced
  • 2 cups spinach
  • 2 teaspoons soy sauce
  • 1 lime juiced
  • 1 tablespoon cilantro chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and ginger; sauté until softened.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the vegetable broth and coconut milk, and bring to a simmer.
  5. Add the dumplings and mushrooms, and cook according to dumpling package instructions.
  6. Stir in the sliced bell pepper, spinach, soy sauce, and lime juice; cook for an additional 5 minutes.
  7. Serve hot, garnished with chopped cilantro.
