Taco Pasta Recipe (One Pot, High Protein)

  • 8 ounces whole wheat pasta
  • 4 slices turkey bacon
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 cups chicken broth
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (optional)

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and set aside.
  2. In the same pot, add olive oil, onion, and garlic; sauté until softened.
  3. Add taco seasoning and stir well.
  4. Pour in chicken broth, black beans, corn, diced tomatoes, and pasta; stir to combine.
  5. Bring to a boil, then reduce heat to simmer; cover and cook until pasta is tender.
  6. Stir in cooked turkey bacon and cheese, if using, until melted.
  7. Serve hot and enjoy!

Notes

  • For extra flavor, top with fresh cilantro or avocado.
  • Make it vegetarian by omitting the turkey bacon and using vegetable broth.
