Sweet Potato Breakfast Hash Recipe

  • 2 medium sweet potatoes
  • 4 slices turkey bacon
  • 1 bell pepper
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt to taste
  • Black pepper to taste
  • 4 eggs (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Dice the sweet potatoes, bell pepper, and onion. Mince the garlic.
  3. In a large bowl, toss the diced sweet potatoes, bell pepper, onion, garlic, olive oil, paprika, salt, and pepper.
  4. Spread the mixture on a baking sheet and bake for 25-30 minutes, or until sweet potatoes are tender.
  5. In the meantime, cook the turkey bacon in a skillet until crispy. Crumble and set aside.
  6. Once the sweet potato mix is done, remove from the oven and stir in the bacon.
  7. If using, fry the eggs to your liking and serve on top of the hash.
