1 onion, chopped
2 garlic cloves, minced
3 bell peppers, diced
1 pound turkey bacon, chopped
2 cups chicken ham, chopped
4 cups chicken broth
1 can (15 ounces) diced tomatoes
1 tablespoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 cup cooked rice (optional)
Instructions
In a large pot, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
Add diced bell peppers and turkey bacon, cook until bacon is crispy.
Stir in chicken ham, chicken broth, diced tomatoes, Italian seasoning, salt, and black pepper.
Bring the soup to a boil, then reduce heat and let it simmer for 30 minutes.
If using, add cooked rice in the last 10 minutes of cooking.
