Strawberry Sheet Shortcake

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup milk
  • 4 cups fresh strawberries, sliced
  • 1 cup heavy cream
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a sheet cake pan.
  2. In a bowl, mix together the flour, baking powder, and salt.
  3. In another bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition, then stir in vanilla.
  5. Gradually add the flour mixture to the creamed mixture alternating with milk, beginning and ending with flour.
  6. Pour the batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let it cool completely before frosting.
  9. Whip the heavy cream with powdered sugar until soft peaks form.
  10. Spread whipped cream over the cake and top with sliced strawberries.
