  • 1 large egg
  • 1 teaspoon vanilla extract

  • 1/2 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 cup fresh strawberries, diced

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the butter, granulated sugar, and brown sugar until creamy.
  3. Add the egg and vanilla, then mix until combined.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. In a separate bowl, combine the cream cheese and powdered sugar until smooth.
  7. Fold in the diced strawberries into the cream cheese mixture.
  8. Take a scoop of cookie dough, flatten it, place a spoonful of the cheesecake mixture inside, and fold the dough over to seal.
  9. Place on a baking sheet and bake for 12-15 minutes.
  10. Allow to cool before serving.

Notes
