- 2 medium sweet potatoes
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup uncooked rice
- 2 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1/2 onion, diced
- 2 cloves garlic, minced
- Heat olive oil in a skillet over medium heat.
- Saute onions and garlic until translucent.
- Add sweet potatoes and red bell pepper, cook until tender.
- Stir in black beans, rice, vegetable broth, cumin, and chili powder.
- Bring to a boil, then reduce heat and cover. Cook for 20 minutes or until rice is done.
- Fluff with a fork and serve.
Notes
- For extra spice, add jalapeños.
- Top with avocado or cilantro before serving.
