Southwest Chicken Casserole

A hearty and flavorful Southwest Chicken Casserole that combines chicken with a medley of spices and toppings, perfect for family dinners.

  • 2 cups cooked shredded chicken
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 2 cups shredded cheese, Mexican blend
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tortilla chips, for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine cooked chicken, black beans, corn, salsa, half of the cheese, chili powder, cumin, garlic powder, onion powder, salt, and pepper.
  3. Transfer the mixture to a greased baking dish and spread evenly.
  4. Top with the remaining cheese and crushed tortilla chips.
  5. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  6. Remove from the oven and let it cool for a few minutes before serving.

Notes

  • For extra spice, add jalapeños to the mixture.
  • Serve with sour cream or guacamole for additional flavor.
