  • 2 cups cooked and shredded chicken
  • 1 cup turkey bacon, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cups shredded cheese
  • 1 cup salsa
  • 1 tablespoon taco seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 12 tortillas

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine chicken, turkey bacon, black beans, corn, red bell pepper, onion, cheese, salsa, taco seasoning, garlic powder, and cumin.
  3. Layer tortillas on the bottom of a baking dish, then add half of the chicken mixture.
  4. Repeat layers, ending with tortillas and cheese on top.
  5. Bake for 30-35 minutes until golden and bubbly.
  6. Let it cool before serving.

Notes

  • For a spicier version, add jalapeños to the mixture.
  • Serve with a side salad for a complete meal.
