- 2 cups cooked and shredded chicken
- 1 cup turkey bacon, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 onion, diced
- 2 cups shredded cheese
- 1 cup salsa
- 1 tablespoon taco seasoning
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 12 tortillas
- Preheat oven to 350°F (175°C).
- In a large bowl, combine chicken, turkey bacon, black beans, corn, red bell pepper, onion, cheese, salsa, taco seasoning, garlic powder, and cumin.
- Layer tortillas on the bottom of a baking dish, then add half of the chicken mixture.
- Repeat layers, ending with tortillas and cheese on top.
- Bake for 30-35 minutes until golden and bubbly.
- Let it cool before serving.
