- 1 pound pinto beans
- 2 cups diced smokey ham
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 6 cups chicken broth
- 1 teaspoon smoked paprika
- 2 bay leaves
- Salt to taste
- Pepper to taste
- Rinse the pinto beans and soak them overnight.
- In a large pot, sauté the onion and garlic until translucent.
- Add the diced ham and cook for a few more minutes.
- Drain the pinto beans and add to the pot along with chicken broth.
- Stir in cumin, smoked paprika, and bay leaves. Bring to a boil.
