Smokey Ham and Pinto Bean Soup

A hearty soup featuring the rich flavors of smokey ham combined with nutritious pinto beans, perfect for those chilly nights.

  • 1 pound pinto beans
  • 2 cups diced smokey ham
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 6 cups chicken broth
  • 1 teaspoon smoked paprika
  • 2 bay leaves
  • Salt to taste
  • Pepper to taste

Instructions

  1. Rinse the pinto beans and soak them overnight.
  2. In a large pot, sauté the onion and garlic until translucent.
  3. Add the diced ham and cook for a few more minutes.
  4. Drain the pinto beans and add to the pot along with chicken broth.
  5. Stir in cumin, smoked paprika, and bay leaves. Bring to a boil.
  6. Reduce heat and let it simmer for 1.5 to 2 hours until beans are tender.
  7. Season with salt and pepper before serving.

Notes

  • For a thicker soup, mash some of the beans with a fork.
  • This soup can be made ahead and reheated for optimal flavor.
