- 1 onion, diced
- 2 cloves garlic, minced
- 1 eggplant, diced
- 2 zucchini, sliced
- 1 bell pepper, chopped
- 4 cups diced tomatoes
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
