Slow Cooker Lemon Herb Chicken and Rice

A delicious and easy-to-make slow cooker meal that is perfect for families.

Ingredients

  • 4 pieces chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 lemon (zested and juiced)
  • 2 cloves garlic (minced)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a slow cooker, add the olive oil, garlic, thyme, rosemary, lemon zest, and lemon juice.
  2. Place the chicken thighs on top and season with salt and pepper.
  3. Add the rice and chicken broth to the slow cooker.
  4. Cover and cook on low for 4-6 hours or until the chicken is cooked through and the rice is tender.
  5. Once done, fluff the rice and serve.

Notes

  • For added flavor, marinate the chicken in lemon juice and herbs for a few hours before cooking.
