Slow Cooker Chicken Stew

  • 1 pound chicken thighs
  • 3 cups mixed vegetables (carrots, peas, and corn)
  • 4 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pan over medium heat. Add onion and garlic, sautéing until fragrant.
  2. Transfer onion and garlic to the slow cooker.
  3. Add chicken thighs, mixed vegetables, chicken broth, thyme, rosemary, salt, and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred the chicken before serving and stir to combine.

Notes

  • For a thicker stew, mix a tablespoon of cornstarch with cold water and stir into the stew during the last 30 minutes of cooking.
