- 2 pounds chicken thighs
- 4 cups chicken broth
- 3 cups chopped vegetables (carrots, potatoes, celery)
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
- Heat the olive oil in a skillet over medium heat. Add the chicken thighs and brown on both sides.
- Transfer the browned chicken to the slow cooker.
- Add the chopped vegetables, onion, garlic, thyme, rosemary, salt, and pepper to the slow cooker.
