Slow Cooker Chicken Stew

Ingredients

  • 2 pounds chicken thighs
  • 4 cups chicken broth
  • 3 cups chopped vegetables (carrots, potatoes, celery)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add the chicken thighs and brown on both sides.
  2. Transfer the browned chicken to the slow cooker.
  3. Add the chopped vegetables, onion, garlic, thyme, rosemary, salt, and pepper to the slow cooker.
  4. Pour the chicken broth over the ingredients in the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 4 hours.
  6. When the cooking time is complete, shred the chicken and stir it back into the stew.

  • This stew can be made with various vegetables based on your preference.
  • For a thicker stew, consider adding a cornstarch slurry at the end of cooking.
