Slow Cooker Blueberry French Toast

A delicious and easy recipe for Slow Cooker Blueberry French Toast that is perfect for breakfast or brunch.

  • 1 loaf bread, cubed
  • 2 cups blueberries
  • 6 eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup maple syrup

Instructions

  1. In a slow cooker, layer half of the cubed bread and half of the blueberries.
  2. In a bowl, whisk together the eggs, milk, sugar, vanilla extract, cinnamon, and salt.
  3. Pour the egg mixture over the bread and blueberries in the slow cooker.
  4. Add the remaining bread and blueberries on top, then pour the remaining egg mixture over everything.
  5. Drizzle maple syrup over the top.
  6. Cover and cook on low for 6-8 hours or high for 3-4 hours until set.
  7. Serve warm with additional maple syrup if desired.
