- 4 large baking potatoes
- 1 pound ground beef
- 1 cup peas
- 1 cup carrots, diced
- 1 cup corn
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup beef broth
- 2 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 1 teaspoon thyme
- 1 teaspoon rosemary
- 1/2 cup cheddar cheese, shredded
- 2 tablespoons butter
- Salt and pepper to taste
- Preheat your oven to 400°F (200°C).
- Wash and bake the potatoes in the oven for about 45-60 minutes until tender.
- In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add onions and garlic to the skillet and sauté until translucent.
- Stir in carrots, peas, and corn, cooking until tender.
- Mix in beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary. Let simmer for 10 minutes.
- Once potatoes are baked, slice them in half and scoop out some of the flesh, mixing it with butter and seasoning.
- Fill each potato half with the meat mixture, top with cheese, and return them to the oven for 10-15 minutes until cheese is melted.
Notes
- For extra flavor, try adding some hot sauce to the beef mixture.
- Feel free to use ground turkey or lamb for a different twist.
