2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
3/4 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup molasses
1 large egg
1 teaspoon vanilla extract
1/4 cup granulated sugar (for rolling)
Instructions
Preheat your oven to 350°F (175°C).
In a bowl, whisk together flour, baking soda, spices, and salt.
In another large bowl, cream together butter and brown sugar until light and fluffy.
Mix in molasses, egg, and vanilla extract until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Chill the dough for at least 30 minutes.
Once chilled, scoop the dough and roll into balls, then roll in granulated sugar.
Place on a baking sheet and bake for 8-10 minutes.
Allow cookies to cool on the sheet for a few minutes before transferring to a wire rack.
Notes
For an extra soft texture, do not overbake the cookies.
