Roasted Tomato Basil Soup Recipe

This Roasted Tomato Basil Soup combines fresh tomatoes, basil, and crispy turkey bacon for a comforting dish perfect for any occasion.

Ingredients

  • 2 pounds ripe tomatoes
  • 1 cup fresh basil leaves
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 slices turkey bacon
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes in half and place them on a baking sheet, cut side up. Drizzle with olive oil and sprinkle with salt and pepper.
  3. Roast the tomatoes for 30-35 minutes until caramelized.
  4. In a pot, cook the turkey bacon over medium heat until crispy. Remove and crumble.
  5. In the same pot, sauté the onion and garlic until translucent.
  6. Add the roasted tomatoes and vegetable broth to the pot. Simmer for 10 minutes.
  7. Stir in the fresh basil and use an immersion blender to puree the soup until smooth.
  8. Serve topped with crumbled turkey bacon.

Notes

  • For a creamier soup, stir in a splash of heavy cream at the end.
  • This soup pairs well with crusty bread.
