Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread cherry tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  3. Roast tomatoes for 20-25 minutes until they burst.
  4. Meanwhile, cook the pasta according to package instructions.
  5. In a bowl, mix ricotta cheese with minced garlic.
  6. Combine roasted tomatoes and the cooked pasta in a large mixing bowl.
  7. Add the ricotta mixture and stir until well combined.
