This roasted potato salad combines crispy turkey bacon with fresh herbs for a delightful twist on a classic dish.

  • 2 pounds baby potatoes
  • 4 strips turkey bacon
  • 1/4 cup olive oil
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon Dijon mustard
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and cut the baby potatoes in half.
  3. In a large bowl, toss the potatoes with olive oil, salt, and pepper.
  4. Spread the potatoes on a baking sheet and roast for 25-30 minutes until crispy and golden.
  5. Meanwhile, cook the turkey bacon in a skillet until crispy, then chop it into pieces.
  6. In a small bowl, mix together the mustard, parsley, and chives.
  7. Once the potatoes are done, let them cool slightly, then combine with the bacon and dressing in a large serving bowl.
  8. Toss everything together and serve warm or at room temperature.
