  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, mix together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the sugars and eggs until smooth.
  4. Add the milk, oil, and vanilla extract to the sugar mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the chocolate chips and pour the batter into the lined cupcake pan.
  7. Bake for 18-20 minutes or until a toothpick comes out clean.
  8. Let the cupcakes cool completely.
  9. In a separate bowl, mix the peanut butter and powdered sugar until smooth and creamy.
  10. Once the cupcakes are cool, pipe or spread the peanut butter mixture on top.
  11. Optionally, melt some chocolate and drizzle it over the cupcakes for an extra treat.
