  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin pan with cupcake liners.
  2. In a bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream the softened butter and sugar until fluffy.
  4. Add the eggs, pumpkin puree, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Fill each cupcake liner halfway with batter and bake for 20-25 minutes.
  7. Allow to cool before frosting.

Notes

  • For a richer flavor, add chocolate chips to the batter.
  • Frost with cream cheese frosting for an enhanced taste.
