  • 4 large eggs
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a mixing bowl, combine crushed graham crackers, 1/2 cup sugar, and melted butter. Press the mixture into the bottom of a springform pan.
  3. In another bowl, beat the cream cheese until smooth. Add pumpkin, 1 cup sugar, and vanilla extract, mixing until well blended.
  4. Add eggs one at a time, mixing well after each addition. Stir in cinnamon, nutmeg, ginger, and salt.
  5. Pour the filling into the prepared crust and smooth the top.
  6. Bake for 60-70 minutes, or until the center is set.
  7. Allow to cool, then refrigerate for at least 4 hours before serving.
