- 3 leeks
- 4 slices turkey bacon
- 1 onion
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Wash and chop the potatoes and leeks.
- In a large pot, cook the turkey bacon until crispy. Remove and chop.
- Add olive oil and onions to the pot, cooking until soft.
