Potato and Leek Soup

A warm and satisfying potato and leek soup, enhanced with the savory flavor of turkey bacon. Perfect for cold days!

Ingredients

  • 4 large potatoes
  • 3 leeks
  • 4 slices turkey bacon
  • 1 onion
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Wash and chop the potatoes and leeks.
  2. In a large pot, cook the turkey bacon until crispy. Remove and chop.
  3. Add olive oil and onions to the pot, cooking until soft.
  4. Add the chopped leeks and potatoes, stirring for a few minutes.
  5. Pour in the chicken broth and bring to a boil.
  6. Reduce heat and simmer until potatoes are tender.
  7. Blend the soup until smooth, then stir in heavy cream and season with salt and pepper.
  8. Serve hot, topped with crispy turkey bacon.

Notes

  • For a vegetarian option, omit the turkey bacon and use vegetable broth.
  • leftovers can be blended or reheated on the stove.
