  • 4 pieces chicken thighs
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 bell pepper, sliced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add the chicken thighs and brown them on both sides.
  3. Remove the chicken and set aside.
  4. In the same skillet, sauté the onions, garlic, and bell pepper until soft.
  5. Add cumin, paprika, and stir well.
  6. Return the chicken to the skillet.
  7. Add chicken broth and soy sauce, then cover and simmer for about 30 minutes.
