  • 3 large egg whites
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition.
  4. Mix in the vanilla extract and crushed pineapple.
  5. In another bowl, mix together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into a greased cake pan and bake for 25-30 minutes.
  8. While the cake is baking, whip the egg whites and cream of tartar until stiff peaks form.
  9. Spread the meringue over the baked cake and return to the oven for an additional 10 minutes, or until the meringue is golden.
