Pesto Zucchini Orzo with Charred Sweet Corn

  • 2 medium zucchinis, diced
  • 1 cup sweet corn, charred
  • 1/2 cup pesto sauce
  • 2 tablespoon olive oil
  • Salt to taste
  • Fresh basil for garnish

Instructions

  1. Cook the orzo pasta according to package instructions.
  2. While the orzo is cooking, heat olive oil in a skillet over medium heat.
  3. Add the diced zucchini and sauté until tender.
  4. Stir in the charred sweet corn and cook for an additional 2 minutes.
  5. Once the orzo is cooked, drain and add it to the skillet.
  6. Toss everything together with the pesto sauce, and season with salt to taste.
