One Pot Spicy Thai Noodles

  • 8 ounces Thai rice noodles
  • 4 slices turkey bacon
  • 1 tablespoon garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha sauce
  • 2 cups vegetable broth
  • 1 cup bell peppers, sliced
  • 2 green onions for garnish

Instructions

  1. In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
  2. Add garlic and bell peppers to the pot, sauté for 2-3 minutes.
  3. Stir in soy sauce and sriracha sauce, then add vegetable broth.
  4. Bring to a boil and add rice noodles, cooking according to package instructions until tender.
