Mushroom and Zucchini Pasta

A simple yet flavorful pasta dish that combines the earthy taste of mushrooms with the fresh crunch of zucchini, perfect for a quick weeknight dinner.

  • 8 ounces pasta of your choice
  • 2 tablespoons olive oil
  • 1 cup sliced mushrooms
  • 1 medium zucchini, diced
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons grated Parmesan cheese

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat.
  3. Add the sliced mushrooms and sauté for about 5 minutes until they begin to soften.
  4. Stir in the diced zucchini, garlic, and red pepper flakes; cook for another 3-4 minutes.
  5. Add the cooked pasta to the skillet and toss to combine with the vegetables.
  6. Season with salt and black pepper to taste.
  7. Remove from heat and sprinkle with Parmesan cheese before serving.
