Mudslide Cupcakes with Baileys Frosting

  • 1/2 tsp baking soda

  • 1/2 cup unsalted butter, softened

  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/2 cup Bailey’s Irish Cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, cream together the butter and sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract and buttermilk.
  6. Gradually mix the dry ingredients into the wet mixture.
  7. Finally, fold in the Bailey’s Irish Cream until well combined.
  8. Divide the batter evenly among the cupcake liners and bake for 18-20 minutes.
  9. Let the cupcakes cool completely before frosting.

Notes

  • For an extra touch, drizzle more Bailey’s over the assembled cupcakes.
