Moroccan Spiced Lamb Tagine

A delicious Moroccan Spiced Lamb Tagine recipe that combines tender lamb, aromatic spices, and hearty vegetables.

  • 2 pounds lamb shoulder, cut into chunks
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon cayenne pepper
  • 1 can chickpeas, drained and rinsed
  • 2 cups diced tomatoes
  • 2 cups chicken broth
  • 1 carrot, sliced
  • 1 red bell pepper, chopped
  • 1 zucchini, chopped
  • 1/2 cup dried apricots, chopped
  • 1/4 cup slivered almonds
  • 1/4 cup fresh cilantro, chopped

Instructions

  1. In a large tagine or pot, heat olive oil over medium heat.
  2. Add the lamb and brown on all sides.
  3. Add onions and garlic, cooking until soft.
  4. Stir in spices and cook for 1 minute until fragrant.
  5. Add chickpeas, tomatoes, chicken broth, carrot, bell pepper, zucchini, and apricots.
  6. Bring to a boil, then reduce heat and cover, letting simmer for about 1.5 to 2 hours until lamb is tender.
  7. Serve hot, garnished with almonds and cilantro.
