- 2 pounds lamb shoulder, cut into chunks
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon cayenne pepper
- 1 can chickpeas, drained and rinsed
- 2 cups diced tomatoes
- 2 cups chicken broth
- 1 carrot, sliced
- 1 red bell pepper, chopped
- 1 zucchini, chopped
- 1/2 cup dried apricots, chopped
- 1/4 cup slivered almonds
- 1/4 cup fresh cilantro, chopped
- In a large tagine or pot, heat olive oil over medium heat.
- Add the lamb and brown on all sides.
- Add onions and garlic, cooking until soft.
- Stir in spices and cook for 1 minute until fragrant.
- Add chickpeas, tomatoes, chicken broth, carrot, bell pepper, zucchini, and apricots.
- Bring to a boil, then reduce heat and cover, letting simmer for about 1.5 to 2 hours until lamb is tender.
- Serve hot, garnished with almonds and cilantro.
