  • 4 chicken thighs
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 lemon, zested and juiced
  • 2 tbsp olive oil
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken thighs with salt, pepper, cumin, cinnamon, and paprika, and brown them in the pot.
  3. Add chopped onion and minced garlic, sauté until softened.
  4. Stir in the broth and bring to a boil.
  5. Add rice, carrots, and peas, cover, and lower the heat to simmer for about 20 minutes.
  6. Remove the pot from heat and let it sit covered for an additional 10 minutes.
  7. Fluff the rice with a fork, add lemon zest and juice, and serve.

Notes

  • For extra flavor, consider adding raisins or almonds.
  • You can substitute chicken thighs with chicken breasts if preferred.
