- 4 chicken thighs
- 1 cup basmati rice
- 2 cups chicken broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tsp ground cumin
- 1 tsp ground cinnamon
- 1 tsp paprika
- 1 cup carrots, diced
- 1 cup peas
- 1 lemon, zested and juiced
- 2 tbsp olive oil
- salt and pepper to taste
- Heat olive oil in a large pot over medium heat.
- Season chicken thighs with salt, pepper, cumin, cinnamon, and paprika, and brown them in the pot.
- Add chopped onion and minced garlic, sauté until softened.

- Remove the pot from heat and let it sit covered for an additional 10 minutes.
- Fluff the rice with a fork, add lemon zest and juice, and serve.
