  • 1/4 cup maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, mix together the pumpkin puree, sugars, oil, eggs, and vanilla extract.
  3. In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  4. Gradually add the dry ingredients to the wet ingredients until combined.
  5. Fold in the pecans and oats.
  6. Pour the batter into the prepared pan and smooth the top.
  7. For the streusel topping, mix together oats, flour, brown sugar, and butter until crumbly, then sprinkle over the batter.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  9. Let cool before drizzling with maple syrup.
