MOIST Pumpkin Bread with Streusel Topping and Maple Glaze

This Moist Pumpkin Bread is topped with a delicious streusel and finished with a sweet maple glaze.

  • 1 1/2 cups all-purpose flour
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, sugars, oil, and eggs until smooth.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Fold in the chopped nuts if using.
  6. Pour the batter into a greased loaf pan and prepare the streusel topping.
  7. To make the streusel, mix together some flour, brown sugar, and cold butter until crumbly and sprinkle over the batter.
  8. Bake for 60-70 minutes or until a toothpick inserted comes out clean.
  9. Let it cool before adding the maple glaze.
  10. For the glaze, whisk together powdered sugar and maple syrup until smooth and drizzle over the cooled bread.
