Ingredients

  • 2 cups fresh cherries, pitted
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon almond extract
  • 1 package refrigerated pie crusts
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet lined with parchment paper.
  2. In a medium saucepan, combine the cherries, sugar, cornstarch, lemon juice, and almond extract. Cook over medium heat until the mixture thickens and bubbles.
  3. Roll out the pie crusts and cut them into small circles.
  4. Spoon a small amount of the cherry mixture onto half of each circle, then fold and seal the edges.
  5. Brush the tops with the beaten egg.
  6. Bake in the preheated oven for 15-20 minutes or until golden brown.
  7. Let cool before serving.
